These are so good! I have been making them in a loaf pan but muffins would be a lot more portable. I started out putting the maple syrup in but then one time I didn’t have any, and we found that we couldn’t even tell the difference, they were sweet enough.

Made these this morning and they are absolutely perfect. Had to sub orange zest as another reviewer did and should have only done 1T. I hope to make them again and leave out the date syrup just to be a bit healthier. Thanks for a great recipe.

I made this today and the muffins are just what I hoped they would be. I reduced the maple syrup by just a bit because ripe bananas can be overly sweet for my pallet. Added some chopped walnuts. I think the lemon zest really added a lot to the flavor. First time making oat flour in my Vitamix and that was a success as well. Thank you for your healthy alternative for gluten intolerant folks who are also WFPB no SOS. Carol

I haven’t tried that, but you could blend up a few dates with a little water to make date syrup which would be an even substitute.
