This was very interesting to make, I did it step by step and the texture came out super crispy on the outside the inside perfectly soft. I made them into a wrap with some garlic sauce and avocado. Was delicious!

Hi!
I don’t have an air fryer but could I bake the eggplant bites in my oven spread out onto a lined cookie sheet with the oven set to pure convection mode using roughly the same temps and time frame ?

What a nice surprise to get such delicious eggplant with no oil. Thank you. The salt threw me off because I never use it, but I was pleasantly surprised how it did play a crucial role in the success of the eggplant. This recipe is a keeper (Saving half for vegan pizza topping!) Yum
