Yummy! Just made them. Being the lazy girl I am, I substituted the coconut oil/apple sauce for 1/4 small apple peeled, cored, and diced. Just chucked everything in my Thermomix. It worked! 😃

Hi Mandi, I haven’t tried these without banana, but I believe mashed sweet potato, pumpkin, and/or a mix of applesauce should work. Enjoy!

These are great. I used coconut oil, honey instead of maple syrup. Added 2T flax seed. 60 grams if mini chocolate chips. Flattened then out like you would peanut butter cookies with my fingers. The dough is sticky

I’ve been looking for nutrient dense cookies for my daughter and I to snack on and these are perfect! Fairly bland, definitely not peanut buttery… I’ll experiment with more next time. I will be making these again!

This was a bookend THK day! Made your scrumptious Pasta e Fagioli this morning, and ended the day making these ah-maaaazing Healthy Peanut Butter Chickpea Cookies! (I added less than 1/4 c mini chocolate chips, and used applesauce instead of oil as we’re SOS-free. Had a 15-oz can of chickpeas, so I added an extra T. of applesauce.) They are DIVINE!

Hi Teresa, I haven’t tried these with chickpea flour so I can’t say for sure, but it might make the cookies a bit dry.
